I recommend CHICKEN SOUP (BROTH). Here is recipe:
INGREDIENTS
- 1 kg Organic Chicken thighs
- 2 carrots, halved
- 1 parsnip, halved
- 1 onion – halved and gently charred
in a dry pan
- vegetable noodles to serve
- fresh parsley
- sea salt and pepper
METHOD
1. Place the chicken in a large pot and cover with 2 litres of cold water.
2. Bring water to the boil and reduce the heat.
3. Add carrots, parsnip and lightly charred onion
4. Cover slightly and simmer for 1 1/2 hours on a gentle heat.
5. Remove chicken and vegetables, and season the broth with a little salt.
6. Serve the broth with pieces of organic chicken and vegetable noodles or you choice of angel hair pasta and fresh chopped parsley.

Portugal is such a nice country. I love Albufeira. Great hotels, food, beach and huge waves Nightlife is great too. Be aware that there are quite a bit of nudity on the beach out there in case you are going with kids. Have a great day :)
